The old question "Shaken or stirred?" does not even arise with molecular cocktails. Instead you can expect loose foam or exotic drops, half hot and half frozen as well as fine spheres that melt in your mouth.

Nothing is as it seems at first glance!

Cocktails are structurally changed, composed differently than before and provided with surprising elements. Frothed espumas are created from cocktails, they are coated with gel, then look like caviar or balls that can be spooned, burst in the mouth and only then, release their contents. Drinks have a different viscosity, can be layered in the glass and liquefy again when stirred.
